Radicchio and Quinoa Salad

Tasty and healthy side dish or light entree. Whole Grain! Gluten Free, Lactose Free, Organic, Soy Free, Vegan.

  • 1/2 cup Organic Quinoa Grain
  • 1 cup Water
  • 4 cups Radicchio thinly sliced
  • 2 Oranges (Juice of 2 navel oranges)
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 cup Golden Raisins
  • 1/4 cup Toasted Pine Nuts
  • 1 Salt (to taste)


Step 1

Bring water to a boil in a 2 quart saucepan. Add quinoa, return to a boil, cover and cook over medium heat for about 12 minutes or until all the water has been absorbed. Remove from heat, fluff, cover and let stand for 15 minutes.

Step 2

Combine cooled cooked quinoa with sliced radicchio, orange juice, olive oil, raisins and pine nuts and toss together. Season to taste with salt. Chill at least 30 minutes before serving.
