Cherry Chia Cornbread

Directions

Step 1

Preheat oven to 350 degrees F. Prepare a 9" square baking dish with non-stick cooking spray, set aside.

Step 2

In a food processor, pulse avocado and grilled corn for 15-20 seconds. Transfer to a large mixing bowl. Combine remaining ingredients and add to corn mixture. Mix well to combine.

Step 3

Transfer mixture to prepared baking dish. Bake for 45 minutes or until golden brown.

Step 4

Serve with a dollop of yogurt. Enjoy!
