DirectionsStep 1Preheat oven to 350 degrees F. Prepare a 9" square baking dish with non-stick cooking spray, set aside.Step 2In a food processor, pulse avocado and grilled corn for 15-20 seconds. Transfer to a large mixing bowl. Combine remaining ingredients and add to corn mixture. Mix well to combine.Step 3Transfer mixture to prepared baking dish. Bake for 45 minutes or until golden brown.Step 4Serve with a dollop of yogurt. Enjoy! |
