Organic Energy Bars with FruitContributed by: Mary FlemingSuper grains energy bars!
DirectionsStep 1Cook the triticale, rye and kamut berries in separate pans to keep each berry flavor distinct. For each berry, bring 1 cup of water and 1/3 cup berries to a rolling boil, turn heat down, cover and simmer for 1 hour. Drain excess liquid.Step 2After the berries have been simmering for 1/2 hour, preheat the oven to 375 degrees. Toast the rolled oats, pumpkin seeds, sunflower seeds and walnut pieces in the preheated oven for 15 minutes. Toss the mix every 5 minutes so as not to burn.Step 3In a small saucepan over low heat, melt the butter. Stir in the honey or maple syrup. Remove from heat. Do not let the mixture boil.Step 4Mix all dry ingredients thoroughly, including the toasted items. Add the fruit and cooked berries and mix well. Add the applesauce and butter mixture. Mix well. If needed, add more applesauce. The mix should hold together, not fall apart.Step 5Line a baking sheet with aluminum foil. Pour the mix into the pan and pat to the full length and width of your baking sheet. Bake for 15 - 20 minutes or until bars begin to turn golden.Step 6Immediately upon removing cooking sheet from oven: use a pizza cutter to cut into bars. Let cool. Package each separately and refrigerate. |
