Peanut Butter Chocolate Chip Millet Cookies

These cookies will disappear quickly in any household and are soft with a crisp outside.


Step 1

Cream together the sugars, peanut butter and butter. Add the egg and beat until fully incorporated.

Step 2

In a separate bowl, whisk together the flour, starch, baking soda, baking powder and salt.

Step 3

Add the dry ingredients to the wet ingredients and blend until combined. Stir in chocolate chips.

Step 4

Refrigerate cookie dough covered for 30 minutes.

Step 5

Preheat oven to 350°F.

Step 6

Place dough by the tablespoon on a greased cookie sheet. Bake for 12 minutes, or until the edges begin to brown.

Mine came out just slightly crumbly (maybe I didn't refrigerate quite long enough.) But, this recipe makes an awesome cookie! One of the best gluten free recipes I have tried. Thank you for sharing it.

Mine were crumbly, too. I don't know what would help stop that. But the flavor is good -- very rich!

To help reduce the crumbly texture, you may be interesed in adding an additional egg white.
