Wheat Free & Gluten Free Pancakes

  • 2 cups Water (scant)
  • 1/4 cup Vegetable Oil
  • 2 Tbsp Sugar
  • 1 Egg
  • 1-1/2 cups GF Biscuit Mix


Place wheat free biscuit mix into a medium size mixing bowl.

Combine in another bowl the egg, sugar, vegetable oil and water, blend well. Pour liquid into wheat free biscuit mix and whisk until just mixed.

Option: fold in fresh, frozen or drained canned blueberries.

Spoon onto 375° griddle, as pancake rise and bubbles appear flip over; grill till lightly golden brown. Enjoy!

Makes 8 pancakes.

These are yummy! The baking mix is very easy to use and the pancakes are light and fluffy.

Loved these pancakes. The batter was very thick, so I actually poured it onto the griddle and then spread it out a little with a spatula. They turned out light and fluffy, and don't taste like GF at all! They taste like the delicious pancakes you'd get at a restaurant.

Delicious! I used coconut oil in the batter and on the griddle, & added a bit more water to the second round.
