Apple, Celery and Walnut Dressing

High Fiber, Low Sugar, Soy Free, Vegan, Vegetarian.

  • One 24 oz package Cornbread Muffin Mix (prepared & crumbled)
  • 1 medium Apple (peeled, cored & chopped)
  • 1 Tbsp Olive Oil
  • 1/2 cup chopped Celery
  • 1/2 cup chopped Walnut Halves
  • 1/2 large Onion, peeled and chopped
  • 2 cups Vegetable Broth (or Chicken Broth)
  • 1/2 tsp ground Sage
  • 1/2 tsp ground Thyme
  • 1/2 tsp ground Basil
  • 1/2 tsp ground Cinnamon
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Sea Salt

Directions

Step 1

Prepare Bob’s Red Mill Corn Bread according to package recipe; cool.

Step 2

In a heavy saucepan sauté onions and celery in olive oil until transparent. Mix corn bread, herbs, spices, apples, walnuts, onions and celery together. Add chicken broth and salt to mixture. Mix together until well-blended.

Step 3

Stuff the dressing into the cavity of the turkey immediately. Place the remaining dressing around the bird. Bake with the turkey, or bake in a separate pan for 45 minutes at 325°F

Serve with turkey and gravy (if desired).

Makes 18 servings.
