Oyster Dressing

  • 1/2 tsp ground black Pepper
  • 1 jar Medium Oysters, drained & minced (16 oz)
  • 2 Tb Olive Oil
  • 1 large Onion, peeled & chopped
  • 1 cup Chopped Celery
  • 4 cups Chicken Broth
  • 1 tsp ground Sage
  • 1 tsp ground Thyme
  • 1 tsp ground Basil (Imported)
  • 1/2 tsp Sea Salt
  • 1 cup prepared & crumbled Cornbread Muffin Mix

Directions

Prepare corn bread according to the recipe, cool. Can be prepared 1 day ahead.

In a heavy saucepan sauté onions and celery in olive oil until transparent. Mix corn bread, onions and celery together. Add oysters to chicken broth then to bread mixture and add herbs, pepper and salt. Mix together until well-blended. Stuff the dressing into the cavity of the turkey immediately. Place the remaining dressing around the bird. Bake with the turkey, or bake in a separate pan for 45 minutes at 325°. Serve with turkey and gravy.

Makes 12 servings.
