Wheat Berry & White Bean Salad (Using Hard White Wheat)

  • 1/4 tsp Black Pepper (Medium Grind)
  • 1 cup Navy Beans or White Beans, cooked
  • 1/2 cup Green Onion chopped
  • 1/2 cup Celery sliced
  • 1/2 cup Tomato diced
  • 1 Vinaigrette Dressing
  • 1/2 cup Olive Oil
  • 2 Tbsp Lemon Juice or Lime Juice
  • 2 Tbsp White Wine Vinegar
  • 2 Tbsp Parsley chopped
  • 1 Tbsp Honey Mustard
  • 2 Tbsp Shallot minced
  • 1/4 tsp Sea Salt
  • 1 cup Organic Hard White Wheat cooked

Directions

Mix the vinaigrette by combining all the ingredients with a whisk or blender. Add the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serve chilled on a bed of leaf lettuce.

Makes 10 servings.
