Pita Pockets


In a mixing bowl combine the first 4 ingredients (water through sugar) and stir with a wire whip. Add the unbleached white flour and salt; stir with a wooden spoon (add more flour as needed).

Turn dough out onto a floured work surface and knead till smooth, about 5-10 minutes. Cover and let rest for 30 minute before dividing into golf-ball sized pieces. Roll each piece into a round shape and flatten with the backside of a heavy dinner plate to about 1/4" thickness. Place flattened pita on a preheated pizza stone or inverted heavy-duty cookie sheet.

Preheat oven to 500°F. Bake for 4 minutes, turn pita over and continue to bake 3-4 minutes longer.

Makes about 6 Pita Pockets.
