Outrageous Muffins

Directions

Step 1

Preheat oven to 350°F. Grease or paper-line muffing tin, set aside. When grinding the almonds watch carefully - do not make almond paste.

Step 2

Mix dry ingredients and dried fruit together in a large bowl. Combine wet ingredients and stir into dry ingredients just until moistened. Batter should be lumpy. Fill prepared muffin tin 2/3 full. Bake for about 25 minutes.

Makes 12 muffins.

Ive made this recipe at least 6 times sometimes exactly as written while other times substituting flour for cornmeal and pecans for almonds. All vaiiations are delicous and a hit with my husband.
