Directions
Dissolve active dry yeast in 1/2 cup warm water for 10 minutes. Add 1 cup unbleached white flour, sugar, and salt. Beat until ropey or stringy, using overhand motion. Add 1-1/2 cups water, 1-1/4 cup triticale flour, vegetable oil and 1-1/2 cup unbleached white flour. Beat until a ball forms.
Knead on floured board 10-12 minutes, adding more flour as needed. Form dough into a smooth ball. Place in a greased bowl, turn to coat. Cover with plastic wrap and let rise 35-40 minutes. Punch dough down and shape into a loaf, place in a greased 9-inch bread pan. Bake at 375° for 30 minutes. Makes 1 loaf (13 slices). |
