Spice-N-Nice PuddingContributed by: Bob's Red Mill Natural FoodsA wonderful dessert with raisins and dried cranberries. This is a wheat-free recipe but does contains gluten.
Directions
Preheat oven to 325°F. Butter or oil spray an 8” x 8” x 2” baking dish or use a nonstick baking pan.
In a large bowl, mix together the cooked rice and cereal. Stir in the raisins and cranberries, set aside. In a bowl, mix together the milk, sugar, eggs, vanilla and cinnamon. Pour into rice/cereal mixture; mix thoroughly. Pour the pudding mixture into the prepared baking dish and sprinkle the nutmeg on top. Place dish in a larger pan containing one inch of hot water. Place on center rack of oven and bake for 45-60 minutes, or until knife inserted in center comes out clean. When set, remove from oven. Custard will set further as it cools. Serve warm or cold. Makes 8 servings. |
