Spinach-Spelt Balls

  • 2 to 3 Tbsp Canola Oil (for frying)
  • 1 Bay Leaves (Premium Hand Selected)
  • 1 Tbsp Seasoning Salt
  • 1 Tbsp Canola Oil
  • 1 Garlic clove, chopped
  • 1 Red Onion small-sized, finely chopped
  • 1 cup Spinach fresh, chopped & packed
  • 1 slice Spelt Bread Day-Old (see this recipe site)
  • 1 Egg beaten
  • 1/2 cup Rolled Spelt Flakes finely ground & toasted
  • 1 Tbsp Basil dried
  • 1/4 cup Tomato Paste
  • 1/4 tsp White Pepper ground
  • 3/4 cup Spelt Berries


Place the spelt grains in a sieve, and rinse under cool running water. Transfer to a 2-quart bowl and add water to cover; cover bowl and soak overnight at room temperature.

Drain the water from the grains and transfer to a 2-quart saucepan. Cover with fresh water, add bay leaf and herb seasoning salt; bring to a boil over medium-high heat. Reduce heat to low, cover and simmer for about 1 hour, or until the grains are tender, stirring several times and adding more hot water if necessary. Remove the pan from the heat, drain off water, allow grains to cool completely.

Place oil in a 2-quart saucepan over medium heat. Add the garlic and onions, saute or 2-3 minutes, or until the onion are soft. Add the spinach and cook for another minute or 2, or just until the spinach wilts.

Place the cooled grains and the spinach mixture and bread in a food processor; process or “grind” until just blended. Transfer the mixture to a 2-quart bowl and add the egg, the toasted rolled spelt, oregano, basil, tomato paste and pepper. Mix thoroughly.

Using wet hands, form the mixture into 12 equal-sized balls. Put 2 tablespoons canola oil in a 10" skillet when hot, add balls and cook over medium heat, turning frequently, for about 5 minutes, or until all sides are browned. Serve immediately.

Serving Suggestion: Arrange balls over spelt spaghetti and top with pasta sauce; sprinkle with grated Parmesan cheese; serve with a freshly prepared tossed salad.

Makes 12 balls.
