Spelt Pilaf

This recipe can be found on our bags of Organic Spelt Berries. Whole Grain! 15% Iron. High Fiber, Lactose Free, Organic, Vegan.

  • 1 cup Spelt Berries
  • 1/2 cup Onion finely chopped
  • 1 Tbsp Vegetable Oil
  • 1/2 lb Mushrooms fresh & chopped
  • 2 cups Vegetable Broth
  • 1-1/2 Tbsp Dried Parsley
  • 1/4 tsp Thyme crushed
  • 1/4 tsp Black Pepper ground

Directions

Step 1

Heat oil in in a large saucepan. Add spelt and onions; saute, stirring occasionally for 3-4 minutes or until fragrant. Add prepared mushrooms and saute 5 more minutes. Add broth and herbs and bring to a boil

Step 2

Cover and reduce heat to low and simmer for 60 minutes, stirring occasionally, until liquid is absorbed.If pilaf becomes too dry during cooking add 1/4 to 1/2 cup of hot water. Remove from heat; serve hot.

Makes 4 servings.

Notes

Variation: add 1/2 cup grated cheese shortly before removing from heat.
