DirectionsStep 1Heat oil in in a large saucepan. Add spelt and onions; saute, stirring occasionally for 3-4 minutes or until fragrant. Add prepared mushrooms and saute 5 more minutes. Add broth and herbs and bring to a boilStep 2Cover and reduce heat to low and simmer for 60 minutes, stirring occasionally, until liquid is absorbed.If pilaf becomes too dry during cooking add 1/4 to 1/2 cup of hot water. Remove from heat; serve hot.Makes 4 servings. NotesVariation: add 1/2 cup grated cheese shortly before removing from heat. |
