Directions
Puree soybeans. Set aside.
Dissolve yeast in warm water with honey. Beat soybeans into yeast mixture and let stand for 20 minutes in a very warm place, around 80°. Combine dry ingredients and add to yeast mixture. Turn dough out onto lightly floured surface and knead until it is very elastic. When you press it with your finger the indentation should pop back. Make a round ball of the dough and put in an oiled bowl, turn dough to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in bulk. Punch down and put in a large oiled loaf pan. Let rise until doubled in bulk. Place in a preheated oven at 350° and bake for 1-1/4 hours. Be creative: add 1/2 cup sprouted wheat, (using Bob’s Red Mill wheat berries) or 1/2 cup Bob’s Red Mill cracked wheat or any of your favorites to this bread. Makes 1 loaf (13 slices). |
