Soybean Variety Muffins

Directions

Preheat oven to 350°. Grease muffin tin, set aside.

Puree soybeans. Beat with honey, eggs, and buttermilk. Blend dry ingredients in another bowl. Combine all ingredients. Add any, or a combination, of the following:

2/3 cup Bob’s Red Mill raisins
2/3 cup Bob’s Red Mill walnuts or pecans, chopped
2/3 cup Bob’s Red Mill coconut
2 tbs lemon rind, grated

Fill muffin tins 3/4 full and bake for 45 minutes.

Yield: 18 muffins
