Soybean Pancakes


Puree soybeans and beat in milk, honey, oil and eggs. Combine dry ingredients. Stir soybean mixture into dry ingredients, blending well, but not beating too much. Pour batter on hot griddle (400°) and spread out with a spoon. Batter will be thick, but don’t add more liquid. Soybean pancakes take longer to cook than ordinary pancakes –– about 3 minutes on each side –– but they come out golden, fluffy, and nutritious.

Makes 18 pancakes.
