Grits Sausage Cheese Casserole

  • 2 cups Sharp Cheddar Cheese, grated
  • 1 lb Bulk Breakfast Style Sausage
  • 1 small Onion, finely chopped
  • 1 stalk Celery, finely chopped
  • 1/4 cup Green Bell Pepper, chopped or 1 Serrano Chili Pepper chopped
  • 4 Tb Butter
  • 4 Eggs, lightly beaten
  • 3/4 cup Milk
  • 1 pinch Cayenne Pepper
  • 1/8 tsp Sea Salt
  • 1 cup Soy Grits (Defatted) (uncooked, follow pkg directions for cooking)

Directions

Lightly spray a 3-quart casserole dish with nonstick cooking spray, set aside.

Brown sausage with onions and celery (may also add bell pepper or serrano chili at this time). Drain on paper towels.

Cook soy grits as directed above. Remove from heat and stir in 1-1/2 cups grated cheese (reserve 1/2 cup for top of casserole). Stir in butter until melted. Add eggs, milk and sausage mixture; blend well by hand. Stir in cayenne pepper and salt to taste. Pour mixture into prepared casserole dish. Sprinkle with remaining cheese.

Bake uncovered for one hour or until cheese is golden brown at 350°F. Allow to stand ten minutes before serving.

Makes 10 servings.
