Muesli Muffins

Directions

Preheat oven to 400°F. Spray 12 cup muffin tin with vegetable spray, set aside.

Topping: Combine 1/4 cup (uncooked) Muesli cereal and 2 tablespoons brown sugar; mix well and set aside.

Muffins: Combine 1-1/2 cups (uncooked) Muesli cereal with remaining dry ingredients in a large bowl and mix well.
In a small bowl, combine the liquid ingredients and mix well. Add the liquid ingredients to the dry ingredients, and stir just until moistened. Fill muffin cups almost full and sprinkle on the topping.

Bake for 20-25 minutes or until light brown. Cool muffins in the pan on a wire rack for 5 minutes, then remove from the pan.

Makes 12 muffins.
