Directions
Place the water and eggs in a medium size mixing bowl (4 qt.); add the semolina, salt and basil. Mix in semolina with wooden spoon. After semolina is well incorporated (2-3 minutes), add small amounts of additional semolina (1/8 cup at a time) to make a pliable dough. Knead pasta 5 minutes then place it in a plastic bag to keep it from drying out.
Using a manual pasta machine roll pasta out very thinly and cut into desired shapes. Drop noodles into gently boiling water; watch carefully as fresh pasta cooks quickly! Makes 6 servings. |
