Semolina Facts

Directions

Semolina is ground from durum wheat, a hard red spring wheat and most widely used for manufacturing commercially dried pasta and couscous. Ther germ and bran has been removed and the flour is enriched. Its extraordinarily high-gluten content gives spaghetti its stretch and keeps pasta from falling part in water. Semolina is pale yellow in color and has a granular texture. Mix with regular flour in baked goods because it would be too hard and chewy if used alone.
