Scottish Sour Scones

Scottish Sour Scones

Directions

Two days prior to baking combine scottish oatmeal and buttermilk in a small bowl. Cover with plastic wrap and place in refrigerator to soak. Stir once each day.

Stir down the soaked oatmeal. In a separate bowl stir together the dry ingredients. Pour the wet mixture into the dry ingredients. Blend until the oatmeal is absorbed into the flour. The dough should be firm enough to lift form the bowl.

Preheat oven to 425°. Use an ungreased baking sheet.
Pat dough into a circular loaf, about 8" diameter and 3/4" thick. Place dough on baking sheet and with a knife score into 8 edge shaped pieces. Bake about 30 minutes.

Remove from oven and place on metal rack to cool before serving. Break along scored cut marks and enjoy.

Yield: 8 servings
