Rolled Barley GranolaContributed by: Bob's Red Mill Natural FoodsIf you enjoy coconut, you'll like this granola.
Directions
In a large mixing bowl combine wheat germ, sesame seeds, coconut flakes, sunflower seeds and rolled barley (or a combination of rolled barley, oats, wheat or rye). Mix well and spread out in a shallow pan.
Cover and bake in a 350 degree oven for about 20 minutes or until slightly browned. Be sure to stir regularly, at least once every 7 minutes so that it toasts evenly and does not burn. In a mixing bowl combine the oil, honey vanilla and spices. Add to the dry, baked granola mixture. Mix thoroughly, cover and bake for an additional 10 minutes, stir frequently. Remove and let cool. After the granola has cooked completely, break up any chuncks that may have formed. Then enjoy! You may substitute any combination of nuts and seeds in this recipe, even add dried fruits in the last baking process. Makes 24 servings. |
