Hearty Herb Bread

An aromatic bread containing wheat germ and rolled oats. A contest winner in the 1992 Bob's Red Mill/Fred Meyer Baking Contest.

Directions

In a large bowl combine 2 cups of white flour, wheat germ, oats, bran, dry milk, yeast, sugar, salt and seasonings; mix thoroughly. Add hot water and oil; beat at medium speed for 2 minutes with heavy-duty electric mixer. Add 1 cup of white flour and egg; beat at high speed for 1 minute; stir in onion. Combine 2 cups white flour and 1 cup whole wheat flour; stir into dough. Place on floured work surface and knead until smooth.

Cover and let rest 20 minutes; punch down. Divide in half and shape into 2 loaves; place loaves in greased 9" x 5" loaf pans; cover and let rise in warm place, free from draft for 1-2 hours or until doubled in bulk. Preheat oven to 400 degrees F and bake for 20 minutes using the center rack of oven. Makes 2 loaves.

Just got this;out of the oven! What a wonderful aroma. I used a "starter" but it turned out wonderful. I definitely will add this to my list of breads to give as gifts. It is a great change from all the sweet breads I have been baking.
