Steamed Vegetables with BarleyContributed by: Bob's Red Mill Natural FoodsThis is a wonderful side dish using sweet potatoes and turnips.
Directions
In a covered sauce pan, bring barley and water to a boil. Reduce heat and simmer with lid slightly ajar for 45-50 minutes.
Meanwhile, in a steamer, arrange onion, turnips, carrots and sweet potatoes on steamer rack. Cover and steam for 15-20 minutes. Place on a heated serving dish. Add the cooked barley overall. In a bowl, combine melted butter, garlic, thyme, mint, salt and pepper. Pour over vegetables and barley; gently combine and serve hot. Makes 12 servings. |
