Carob Mocha Sauce

  • 2 Tbsp Corn Syrup light
  • 1/4 tsp Vanilla Extract
  • 1/4 cup Unsalted Butter
  • 2 Tbsp Instant Coffee
  • 2/3 cup Brown Sugar packed
  • 1 cup Water (hot)
  • 3/4 cup Toasted Carob Powder sifted


Put carob powder in a saucepan. Add hot water in a stream. Stir mixture until smooth. Bring mixture to a boil, stirring constantly and simmer for 3 minute.

Stir in brown sugar, corn syrup, coffee crystals and butter (cut into bits). Simmer the mixture, stirring for 3 minute or until smooth and thickened. Transfer the sauce into a sauce boat and serve it warm or at room temperature.
