Directions
You can make sunflower seed meal by grinding raw sunflower seeds in a clean coffee grinder or food process. The seeds want to be a mealy consistency, not butter.
Soften the yeast in the warm water, with the honey added. When this mixture bubbles, add to it the oil, milk powder, sunflower seed meal, soy flour, and carob powder. Then add enough whole wheat flour to make a stiff dough. Turn the dough out onto a floured board, and knead until smooth and elastic. Shape the dough into a ball, place in a greased bowl, oil the top and cover. Set the dough in a warm place to rise until double in bulk. Then punch it down, knead lightly and let rise once again. Shape the dough into 2 loaves and place them in greased bread pans. Let rise again. Bake at 375°F for 45-55 minutes. Makes 2 loaves (26 slices). |

This is a dense, heavy, black bread. Its loaded with nutrition. My only concern was the quantity of honey. Perhaps this could be reduced to 1/2 cup instead of a cup; otherwise an excellent bread. You need nothing else except a cup of tea for a meal.
