Hodgepodge Amaranth Cookies

This cookie base can be made as is or you can make one of the many varieties provided.


Preheat oven to 350 degrees F. Lightly grease a cookie sheet, set aside.

Combine oil, honey and water in saucepan. Heat gently to melt honey and remove from heat to cool.
Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Add any additional ingredients you choose.

Drop batter by rounded teaspoon onto prepared cookie sheet.

Bake 12-15 minutes, until cookies are brown. Remove to wire rack to cool.

Makes 1 dozen cookies.
