All Barley Raisin Muffins

This delicious recipe is wheat-free but does contain gluten. This recipe was not tested by Bob's Red Mill. High Fiber, Lactose Free, Low Cal, Low Fat.

Directions

Step 1

Preheat oven to 425°F. Lightly grease a muffin pan with nonstick spray (you may also line with paper liners) and set aside.

Step 2

Mix flour, baking powder, salt and sugar together in a large bowl.

Step 3

In another bowl beat oil, water and eggs until blended. Add to dry ingredients. Add raisins, if using. Stir only until dry ingredients are moistened. Spoon batter into prepared muffin pan.

Step 4

Bake for 15 minutes or until browned.

Makes 12 muffins.

too salty..needed less salt and more raisins
