Deluxe Carrot Cake - Gluten Free

What a wonderful blend of crushed pineapple, shredded coconut, and walnuts ... you can even add raisin if you like!

Directions

Preheat oven to 350 degrees F. Spray a 10 cup nonstick bundt pan with cooking spray. Set aside.

Combine flours, xanthan gum, baking soda, cinnamon, salt, and ginger together in a bowl.
Set aside.

In large mixing bowl, beat together eggs, sugars, oil, yogurt and vanilla extract. Add flour mixture slowly until just blended. Stir in carrots, pineapple, coconut, nuts and raisins if using.

Pour batter into prepared pan. Bake 45-50 minutes or until toothpick inserted in center of cake comes out clean. Cool on wire rack.

Makes 12 servings.
