Egg & Dairy Free Moist Cake

This cake will stay moist for quite some time.

Directions

Preheat oven to 325 degrees F. Grease two loaf pans, set aside.

Boil together sugar, 2 cups water, shortening, salt, and raisins. Cool until cold.

Dissolve baking soda in 1 teaspoon hot water. Add flours, cinnamon, cloves, xanthan gum and baking soda solution to sugar mixture; blend well. Divide into two loaf pans. Bake about 45 minutes.

Makes 2 loaves. Each loaf yields 10 slices.

Could this recipe be baked in a cake pan? If possible, what size should be used, & how long to bake it?

This recipe can be baked in a cake pan. Bake at the temperature instructed and begin checking for doneness at 35 minutes.
