Whole Grain Multi Rice Dressing

  • 1/2 cup Pine Nuts
  • 5 cups Chicken Broth fat removed (or Turkey Broth)
  • 2 cups Country Rice Blend
  • 1 Tbsp Olive Oil
  • 1/4 cup Green Onion chopped
  • 3 Garlic cloves, minced
  • 1/4 cup Sweet Red Bell Pepper chopped
  • 1/4 cup Celery chopped
  • 1/2 cup Mushrooms sliced
  • 1/2 tsp Basil dried
  • 1/2 tsp Sage ground
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt to taste


In a large cooking pot bring stock and rice to a rolling boil, stir rice, cover with lid. Reduce heat to low and simmer for 30 minutes, then remove from heat. Any remaining juices should be drained from rice.

In a large skillet saute onions, garlic, sweet red pepper, celery and mushrooms in olive oil. Saute until onions are transparent.

In a large casserole dish combine rice, sauted vegetables and remaining ingredients together; gently toss to blend. Serve hot or refrigerate and reheat later.

Makes 12 servings.
