Directions
In a large cooking pot bring stock and rice to a rolling boil, stir rice, cover with lid. Reduce heat to low and simmer for 30 minutes, then remove from heat. Any remaining juices should be drained from rice.
In a large skillet saute onions, garlic, sweet red pepper, celery and mushrooms in olive oil. Saute until onions are transparent. In a large casserole dish combine rice, sauted vegetables and remaining ingredients together; gently toss to blend. Serve hot or refrigerate and reheat later. Makes 12 servings. |
