Directions
Cut bacon into 1/8-inch strips and saute in a large skillet until almost cooked. Add the onion, celery and garlic. Cook for 5 minutes or until onion is soft. Add the rice and water. Season with salt as desired. Cover, reduce heat and simmer for 45 minutes, or until the rice has absorbed the water.
Uncover and remove from heat. In a small pan, saute pine nuts in butter (do not burn). Add to rice and toss. Place in casserole dish and serve. Makes 8 servings. |
