Bob's Favorite Rice & Mushroom Soup

  • 3/4 tsp Thyme
  • 3/4 tsp cracked black Pepper
  • 3 cups Country Rice Blend
  • 1 cup Water
  • 6 cups Vegetable or Chicken Broth
  • 1 cup Small Whole Mushrooms
  • 2 cups Sliced Fresh Mushrooms
  • 2 Tb Olive Oil
  • 1 cup Sliced Green Onions

Directions

In a heavy, large soup pot saute mushrooms and onion in oil over medium-high heat for 5 minutes. Add broth, water, pepper and thyme. Reduce heat. Simmer uncovered 5-7 minutes. Stir in rice, simmer 2 minutes.

Makes 8 servings.

I have a bag of Bob's Wild and Brown Rice Mix, and thought it might work with this recipe. I'm puzzled though. The directions don't say to cook the rice separately, only to add it at the end and simmer it for two minutes. Surely that can't be right. Please clarify.
