Banana Kamut Pancakes

Directions

Step 1

In a large bowl, combine all dry ingredients. In a separate bowl, mix together all wet ingredients, except egg whites and milk. Add enough milk to make light batter.

Step 2

Whisk egg whites until stiff; fold them gently into batter.

Step 3

Preheat pancake griddle until a drop of water will “dance” on it. (Oil or spray griddle as needed).

Spoon batter onto hot griddle to make pancakes. Fry until bubbles are well-formed around edges of pancakes; turn and cook other side.

Makes 12 pancakes.
