Fruit-Nut Whole Wheat Bread


  • 1/4 tsp Vanilla Extract
  • 2 tsp Milk
  • 1/2 cup Powdered Sugar


Grease 2 (5" x 9") bread pans, set aside.

By hand or with heavy-duty mixer: in large mixing bowl measure 1-1/2 cups each: unbleached white flour and whole wheat flours, and stir in yeast, milk, salt and brown sugar.

Pour in the warm water and stir by hand or at medium speed of the mixer for 1 minute or until fully absorbed. Add the balance of the whole wheat flour and the butter. Beat by hand or machine for about 3 minutes.

Add the rest of the unbleached white flour, 1/4 cup at a time, mixing by hand or with beater till completely absorbed. Your dough should be slightly tacky at this point, not dry.

Turn the dough out onto a generously floured surface. Knead with a strong push-pull motion for about 8-10 minutes (no longer than 10 minutes). Oil a large mixing bowl generously. Turn dough out into bowl and turn once to coat. Cover with plastic wrap or a clean kitchen towel and leave in warm kitchen for about 1-1/4 hours till doubled in bulk. (Depending on yeast the dough may have doubled in less time.)

Sprinkle the fruit with a tiny amount of flour so it does not stick together. Punch the dough down. Work in the nuts and fruit at this point, gently kneading them in for about 4 minutes.

Cut the dough in half and shape into loaves; place loaves into prepared bread pans. Let rise about 1" above the rim of the pans. Before this second rising, you may slash each loaf with a razor blade if you wish.

Preheat oven to 375 degrees F. Bake on the middle rack for about 45 minutes. The crusts should be nicely browned and the loaves, when removed from the pans, should sound hollow when knocked. If the crusts brown too quickly, cover with a piece of foil.

Remove from oven and place on wire rack to cool.
Mix confectioners sugar, vanilla and milk together and drizzle on top of loaves. Garnish with finely chopped nuts.

Cool completely before cutting with a serrated knife.
For great sandwich bread, eliminate the dried fruits and nuts.

Makes 2 loaves (about 26 slices).
