Directions
Preheat oven to 350°F. Lightly grease a cookie sheet, set aside. Combine dates and apple juice concentrate in a saucepan and simmer until fruit softens. Puree mixture in a blender or food processor, then pour into a bowl. Add oil, oatmeal, raisins and cinnamon. Beat the egg white lightly in a separate bowl. Fold the egg white gently into the cookie mixture. Drop the batter by spoonfuls onto prepare cookie sheet. Bake for 10-12 minutes. Remove cookies to rack to cool. Store in an airtight ziplock bag 2-3 days. Makes about 12 cookies.
