Directions
Preheat oven to 250°F, set aside a large roasting pan. Combine all dry ingredients, except dry fruit in a very large mixing bowl. Combine honey and oil in a large measuring cup; pour over dry ingredients, folding in with a large wooden spoon until well-coated. Pour mixture into roasting pan and bake for about 1 hour or until light brown in color, stirring occasionally. Immediately fold in dried fruit while mixture is still warm.
Cool thoroughly and store in glass jars with right lids or airtight containers. Can be stored up to 3 weeks without refrigeration. Variations: You can use peanuts or walnuts in place or cashews or almonds. Substitute coconut, pumpkin seeds or part flaxseed in place of sunflower seeds. Replace dried dates or raisins with chopped, dried bananas, apples or blueberries. Makes about 4 quarts of granola. |
