Almond Cookies

Topping

  • 1/2 tsp ground Cinnamon
  • 2 Tbsp Maple Sugar

Directions

Step 1

Preheat oven to 300°F. Grease cookie sheet; set aside.

Step 2

With a hand mixer, blend the butter, maple sugar and vanilla extract until creamy. Add the almond meal flour and the oat flour and mix until the dough sticks together.

Step 3

Form the dough into 1-1/2 inch balls. Place them on the prepared cookie sheet and bake for 30-35 minutes. Coat the cookies in the cinnamon/maple sugar mixture while they are still warm. Allow cookies to cool completely before enjoying.

Makes 2 dozen cookies.

Notes

*Brown sugar can replace maple sugar.

These are the easiest and best tasting cookies ever. I make them for my knitting group and there is never a leftover. No one even knows they are GF

Had my doubts about making these when I read the ingredients, but what can I say? They are fabulous.
