Banana Bran Nut Muffins

Whole Grain! High Fiber.


Step 1

Preheat oven to 400°F. Insert paper liners in muffin tins, set aside.

Step 2

In a large bowl, combine the bran, whole wheat flour, baking soda, baking powder, salt, brown sugar, and walnuts and stir until well mixed.

Step 3

Measure the oil and yogurt into the blender (or processor) and add the banana, broken up. Blend at medium speed until uniform, then pour over the dry ingredients. Stir gently until all is wet.

Step 4

Spoon the batter into the foil liners and bake for about 20 minutes.

Makes 12 muffins.

These are delish! Really moist muffins with very little oil added. They stick a little bit to paper muffin liners so I think foil liners are the way to go.

This recipe is great! For half of the batter, instead of walnuts, I used chocolate chips for my husband. He actually enjoyed them! I don't eat muffins; however, everyone who had one said they were very delicious. This is definitely a recipe I will keep!

These are great muffins... I substitute 3 tablespoons of apple sauce for 2 tablespoons of oil . It makes the outer layer a little bit chewy but great satisfying muffins! I love making them for road trips and busy mornings
