Cornmeal-Date Muffins

Directions

Preheat oven to 400°F. Place twelve foil muffin liners into a muffin pan, set aside.

Combine the chopped dates with the whole wheat flour and put into a large mixing bowl. Add the cornmeal, salt, baking powder and stir until fairly uniform.

Into another bowl, measure the oil, milk and honey and break in the eggs. Stir with a fork until smooth. Pour the set ingredients over the dry ingredients and stir gently until all is wet.

Divide the batter among the foil liners and bake for about 15 minutes, or until one tests done with a toothpick.

Makes 12 muffins.
