Gluten Free Golden Cornbread Muffins

This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Directions

Combine the buttermilk, eggs and canola oil in a small mixing bowl.

Combine the dry ingredients in a large mixing bowl.

Pour the wet ingredients into the dry and mix well. Fold in chilies or cheese (if using). Portion into a greased muffin tins and bake at 375°F for 15 minutes, or until golden brown and toothpick comes out clean.
