Mixed Grains & Vegetable Pie

  • 1 cup Whole Wheat Flour
  • 1/3 cup Regular Rolled Oats
  • 1/4 tsp Pepper
  • 1/4 cup Vegetable Oil
  • 1/2 cup Diced Onion
  • 1 small Sweet Red Bell Pepper, cored, seeded & chopped
  • 1 small Zucchini, chopped
  • 1 medium Carrot, shredded
  • 4 medium Mushrooms, chopped
  • 1/2 cup cooked Pearl Barley
  • 1/2 cup Soft White Wheat Berries
  • 2 large Eggs
  • 1 Carton Plain Lowfat Yogurt (8 oz)
  • 1/2 tsp Basil (Imported)
  • 1/4 tsp Thyme
  • 1/2 cup cooked Hulled Millet
  • 1 tsp Sea Salt

Directions

Preheat oven to 350°F. Set aside one 9-inch pie plate. Combine flour, oats, 1/2 teaspoon salt and pepper in a large bowl. With a fork stir in 3 tablespoons oil until dry ingredients are moistened. Turn the mixture into pie plate and pat to form an even layer on the bottom and up the sides of the plate.

Heat the remaining 1 tablespoon vegetable oil in a large skillet over medium heat. Add onion, bell pepper, zucchini, carrot and mushrooms to the skillet and sauté, stirring constantly, 5 minutes or until the onion begins to brown. Combine the cooked barley, cooked millet, cooked wheat berries, eggs, yogurt, remaining 1/2 teaspoon salt, basil and thyme in the large bowl. Fold in the vegetables. Turn the mixture into the prepared crust. Set the pie on a rimmed baking sheet and bake 40-45 minutes or until the filling has set. Remove from the oven; cut into wedges and serve immediately. Makes 6 servings.
