Coconut Snowballs

This candy recipe tastes just like the center of an almond joy. This recipe was not tested by Bob's Red Mill.

  • 1 stick Butter (1/2 cup)
  • 12 oz bag Shredded Coconut
  • 14 oz can Sweetened Condensed Milk

Directions

In a large heavy pan, heat butter until it is fully melted on low heat. Add the coconut and mix until butter is absorbed. Add the sweetened condensed milk and continue heat over low. Stir constantly for 10 minutes.
Remove from heat and allow to cool. When mixture is cool enough to handle, roll into small balls. Tastes great as is or served with lemon sorbet.
Variation: Press warm mixture into a 9x9 baking dish, then cover with chocolate chips to melt on the hot candy, then add almonds!
