Peanut Butter Cup Chocolate Cookies

This recipe was not tested in the Bob’s Red Mill Kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

  • 1 cup Unsalted Butter (softened)
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2-3/4 cups GF Chocolate Cake Mix
  • 10 oz Peanut Butter Chips


Cream butter and 1 cup of the cake mix together until fluffy, add eggs and vanilla. Beat until well blended. Add the rest of the cake mix and blend until completely incorporated. Add bag of peanut butter chips and fold into dough. Refrigerate until dough is a little stiffer (about 20 minutes)

Roll into 1 inch balls and place on parchment lined cookie sheets. Bake 10 minutes in 350°F. Allow to cool 1 minute, then remove and place on wire racks to cool. Makes about 3 1/2 dozen cookies.
