Directions
Wash, pick over and rinse lentils. Boil lentils in a quart of water until barely tender, about 30 minutes. Drain.
Dressing: whisk together lemon juice, Italian seasoning, mashed garlic and olive oil in a bowl; set aside. Add celery, tomatoes and green onion to cooled, cooked lentils.
