Gluten Free Hoecakes

  • 1 cup GF Cornbread Mix
  • 1 Egg
  • 1-1/2 Tbsp Sugar
  • 1/2 cup Buttermilk
  • 1/4 cup Water
  • 1/4 cup Oil + 1 tsp
  • Oil for frying

Directions

Mix together all the ingredients except the frying oil.  Add a little more water or buttermilk if needed to get a pancake consistency.  Heat oil in a skillet on medium heat.  Use about 2 Tb of batter per hoecake.  Brown on both sides.  Serve with syrup or honey.  Makes 16 hoecakes.

"Amazing" was my son response to his first bite. I made them a little bigger to use as shortcakes with strawberries.

I didn't even try the recipe. The recipe calls for "1 Oil for frying" and the directions refer to "drying oil". Huh?

"1 Oil for frying" is to say "Oil for frying" and "drying oil" is to be "frying oil."

I didn't follow the recipe exactly: I skipped the sugar and replaced the oil with more buttermilk. Then I fried them in coconut oil and poured honey on them. Really hit the spot!
