GF Cornbread Mix Pancakes

This recipe comes from a customer using our Gluten Free Cornbread Mix to make pancakes. She lets the pancakes sit out to cool and then freezes them for a quick morning breakfast.

  • 1-1/2 cups GF Cornbread Mix
  • 1 Egg (or 3 Tb Egg Whites)
  • 3 Tbsp Oil
  • 1 cup 1/4 Rice Milk*
  • 1/2 tsp Imitation Butter Flavoring (optional)
  • 2 Tb Maple Syrup (optional)

Directions

Mix all ingredients together until well blended. Batter will be a bit runny.  Heat a nonstick pan on medium heat. Drop 1/4 cup of mix onto pan. Turn when you first start to see bubbles. They cook pretty quick, so don't walk away. 

Makes 12 pancakes
Serve as is or with maple syrup, powdered sugar or your favorite fresh fruit jam.

I tried this, but it didn\'t work the way it should. Better was too thick actually and so I added extra milk. They tasted good, but were difficult to cook. Perhaps I did something wrong, though I followed the directions.
