Barbara's Lentil & Rice Delight

This is our daughter-in-law's recipe and we think it is great! Whole Grain! Gluten Free*, High Fiber, Low Fat, Low Sugar, Soy Free, Vegetarian.

Directions

In a 4 quart stock pot simmer all ingredients, except cheese, for approximately 1 hour.  Leave it a little soupy so you can ladle it out into large soup bowls. Top each bowl with a generous amount of grated cheese just before serving.

Makes 8 servings.

Notes

*This recipe is wheat free but may contain traces of gluten.
