Rollable Pizza CrustContributed by: Nan Goodman, Food ScientistThis recipe uses the Gluten Free Pizza Crust as a base with a few alterations for a dough you can roll out.
Directions
Combine pizza crust mix, rice flour and yeast in bowl. Add warm water and stir slightly to moisten. Add remaining ingredients. Blend on low speed 1-2 minutes.
Spray dough with cooking spray, or brush lightly with oil. Leaving dough in bowl, cover and allow to rise for 20 minutes. Heat oven to 400°F. Grease 2 - 12” pizza pans. Cut out circles of parchment paper and fit into greased pans. Divide dough in half. Place one dough half in each pan. Spray with cooking spray or brush lightly with oil. Place another circle of parchment paper over each dough ball. Using hands, small rolling pin or glass bottle, roll out dough to edges of pans. Remove top parchment and finish shaping crust up edges of pan. Parbake without toppings 8-10 minutes. Remove from oven. Cover with favorite sauce and toppings. Bake an additional 15 minutes on lower rack of oven. (Or, if desired, bake 10 minutes, remove pizza from pan, remove lower parchment paper, and finish baking directly on middle rack.) Makes 8 servings. |

The alterations made here allow you to do all kinds of stuff to the dough that couldn't with the original mix. It allows you to roll the pizza much flatter while staying together well. I was able to roll it thin enough to make pizza rolls which I'll post the recipe for
